Spicy bean and chickpea curry…

My newest creation.
Spicy bean and chickpea curry. 

Right-o! In the name of being healthy I have been gathering ideas for more vegetarian dishes that I can make. This here is Exhibit A – Chickpea and Mixed Bean Curry. It’s fairly mild, cost me £1.50 to feed four people and took 15 minutes to make. If you are a student or anyone else who is squeezed for time/lazy/almost too tired to lift the saucepan, then I recommend this for you. Though I will stress right now, it’s very basic…

You will need:

  • Rice (however much you eat yourself, multiply by the number of people)
  • 1 x Can of Mixed Bean Salad
  • 1 x Can of Chickpeas
  • 1 x Can of chopped tomatoes
  • Some mild curry powder (again, this is to your taste, I won’t give you measurements)
  • 2 x Medium-sized saucepans.

The “How-To”:

  1. Put the rice in to cook - Put the rice in the pan, flatten it out then fill the pan with water to about 2cm above the level of the rice; this should be all you need. The time this takes will depend on the rice you pick; brown rice will take longer than white. I used a white rice and wild rice combo. (18 minutes)
  2. Put the chickpeas and beans in a separate pan, bring to the boil. (4 minutes)
  3. Drain the chickpeas and beans into a colander.
  4. Use the chickpea/bean pan to simmer a can of chopped tomatoes. (2 minutes)
  5. Add curry powder to taste and mix well with tomatoes. (2-3 minutes)
  6. Stir in the chickpeas and beans. (1 minute)
  7. SERVE! :)

Super quick, super easy. Obviously you can add extra things to the sauce. Like I said, it’s very basic! But, it was all of my five a day in one sitting!
